You work hard all day long – you deserve a break! What better to go with your break than a little popcorn. Good thing for you, today is National Popcorn Day. Enjoy the moment with my families favorite recipe. Not only is this better for you, it tastes fabulous!
- 2 Tbs Coconut Oil
- 1/2 c. Popcorn Kernels
- Sea Salt to taste
- 2 Tbs Butter (optional)
Heat coconut oil in large pot over medium heat. Add popcorn and cover, shaking occasionally until kernels start to pop. Continue to shake until 5 seconds in between kernels popping. Pour popcorn into serving bowl. In hot pot (heat turned off), add butter to melt. Pour butter over popcorn, sprinkle with sea salt and ENJOY!
*for a spicy version, we add 2 tsp. Tabasco to the butter
Can’t do all of this at work? No problem, neither can I. I make a big batch at night and take small baggies to work to tide me over at #BreakTime!
